Aurangabad's food carries the weight of Mughal history — naan khaliya, the city's most iconic dish, has been served at weddings and feasts since the 16th century, and you still can't find it everywhere in town. Sagar Restaurant in Budhi Lane is one of the few places that does it right: mutton slow-cooked for hours in an onion-khaskhas-coconut gravy, served with yellow turmeric naan that's nothing like the butter naan you know. What makes Aurangabad different from other Maharashtra cities is this layering of Mughal and Marathi food cultures — Trimurthi Appa's tari pulao samosa is found nowhere else in India, Uttam Mithai Wala's imriti (urad dal sweet, crispier and thicker than jalebi) has been made the same way for generations, and Nuss Appa Halwai has been selling only peda for 200 years.
